Bourbon Smoked Stuffed Onions

Ingredients
  

  • 4 Slices Bacon
  • 4 Pieces Jalapeños
  • 4 Pieces Sweet Onions
  • ¼ Cup Seasoning
  • 3 tbsp Butter
  • ½ Cup BBQ sauce

Equipment

  • 1 Smoker
  • 1 Grill
  • 1 Cast Iron Pan
  • Lump Charcoal
  • 1 Kitchen Knife
  • 1 Paring Knife
  • 3 Bourbon Smoking Chips

Method
 

Prep
  1. Preheat your cast iron pan on the grill to 400 degrees
  2. Then start cutting the bacon and jalapenos into small pieces
  3. Add bacon and jalapenos to cast iron over grill and cook for 10 minutes
  4. Using your paring knife, cut a circle around the core of the onions
  5. Pull out the core (it will be cone shaped) – refer to video below 🙂
  6. Dice the core up and add to cast iron pan
  7. Continue grilling for 10 more minutes
Onions
  1. Preheat your smoker to 225
  2. Once all 4 of your cores are cut out of each sweet onion
  3. Season the inside of the onions with your favorite seasoning. I used a premade rub for this
  4. Carefully insert the bacon, jalapenos and chopped cores into each of the onions
  5. Cut your butter into 4 pieces and place on top of each onion
  6. Smoke your onions for 2 hours
  7. Cut, slice, bite and enjoy. These are PERFECT for sides 🙂
