Bourbon Smoked Stuffed Onions
Equipment
- 1 Smoker
- 1 Grill
- 1 Cast Iron Pan
- Lump Charcoal
- 1 Kitchen Knife
- 1 Paring Knife
- 3 Bourbon Smoking Chips
Ingredients
- 4 Slices Bacon
- 4 Pieces Jalapeños
- 4 Pieces Sweet Onions
- ¼ Cup Seasoning
- 3 tbsp Butter
- ½ Cup BBQ sauce
Instructions
Prep
- Preheat your cast iron pan on the grill to 400 degrees
- Then start cutting the bacon and jalapenos into small pieces
- Add bacon and jalapenos to cast iron over grill and cook for 10 minutes
- Using your paring knife, cut a circle around the core of the onions
- Pull out the core (it will be cone shaped) – refer to video below 🙂
- Dice the core up and add to cast iron pan
- Continue grilling for 10 more minutes
Onions
- Preheat your smoker to 225
- Once all 4 of your cores are cut out of each sweet onion
- Season the inside of the onions with your favorite seasoning. I used a premade rub for this
- Carefully insert the bacon, jalapenos and chopped cores into each of the onions
- Cut your butter into 4 pieces and place on top of each onion
- Smoke your onions for 2 hours
- Cut, slice, bite and enjoy. These are PERFECT for sides 🙂
