Grape Leave Wrapped Sardines

Sardines are a great source of protein. They are also a sustainable fish and have been around for centuries.

Sardines are an excellent source of omega-3 fatty acids, which reduce inflammation and promote healthy heart function.

Sardines are also rich in minerals like calcium, magnesium, potassium, and zinc.

Sardines can be eaten with bread or crackers as a sandwich filling or as an appetizer on their own.

They can be served whole or canned in their own liquid or in olive oil with garlic and spices added to the mix for extra flavor.

Grape Leave Wrapped Sardines

Cook Time 9 minutes
Servings 3 people

Equipment

  • 1 Griddle

Ingredients
  

  • 6 sardines Headless Sardines
  • 6-10 leaves Pickled Grape Leaves – depending on how big the sardines are
  • 1 tbsp Salt
  • 1 tbsp Pepper
  • ¼ cup Lemon juice
  • Scallions
  • 1 handful Olives
  • 1 handful Cherry Tomatos

Instructions
 

  • Start by washing your sardines under water
  • Season all sardines with just salt and pepper
  • Add some lemon juice to your sardine and grape leaf
  • Roll the fish in the grape leave
  • Once all are rolled over high heat, grill for 5-7 minutes per side or until 140 internal temp
  • While those are cooking add your tomatos, olives and scallions to a bowl
  • Season with salt and pepper. Add some lemon juice or red wine vinegar to taste
  • Once the sardines are finished pull them off the griddle and unwrap the grape leaves. You can discard the leaves or use as the base to your plate
  • I choose to use new grape leaves as the base
  • Add your tomatos and olives to the bowl and then your sardines on top
